The vineyards, the majority of which are located in Maimbray, lie on classic clay\/ chalk soils known locally as ‘Terres Blanches’. The parcel of vines for the top red cuvée ‘À Nicolas’ is situated between Bué and Sancerre itself. Here the soils are pure chalk ‘Caillottes’. Working all the 14 hectares of vineyards manually, without weed killers or use of industrial fertilisers, contributes greatly to the ultimate quality of their wines, revealing an excellent natural expression of their origins. Pascal also believes in retaining grass cover between the rows in order to provide competition to the vines’ roots, reduce vineyard humidity and stimulate nitrogen production. His wines are vinified separately, parcel by parcel. All are bottled with only a light or no filtration, after a few months of maturation in stainless steel or conical oak vats, depending on the particular cuvée. His aim was, and is, to produce a wine of real acclaim at the estate, ultimately delivering the full potential of the Chinon soils, whilst also respecting its best ancient traditions. He has brought about significant improvements in vineyard management: lowering yields dramatically, introducing manual harvesting and converting to biodynamic principles (but choosing to remain uncertified), whilst also reviewing and enhancing all winemaking techniques in the cellar (extended maceration, longer and gentler élevage in 2nd fill, less handling and manipulation, later bottling). His first vintages are already beginning to express the true potential of their vineyards: silky, deep and rich; Cabernet Franc without any of the green vegetal character, so often showing in the lesser wines from this region.\u003cbr\u003eChinon Rouge ‘Les Messanges’: named after the original home of Cabernet Franc: the village of Messanges in South West France. Working all the 14 hectares of vineyards manually, without weed killers or use of industrial fertilisers, contributes greatly to the ultimate quality of their wines, revealing an excellent natural expression of their origins. Pascal also believes in retaining grass cover between the rows in order to provide competition to the vines’ roots, reduce vineyard humidity and stimulate nitrogen production. His wines are vinified separately, parcel by parcel. The opportunity came in the early 1990s, when he purchased land in the Coteau de Noiré, a superbly situated hillside vineyard east of Chinon, upstream between Chinon and Cravant-les-Côteaux. Here there is an east-west slope of limestone, which is very favourable for vines, as the soils are poor and the south-facing aspect gives excellent exposure to the sun. Although 1 hectare had been established in the early 1980s, the remainder of this steep south-facing slope was planted in 1996.
