However, his love and passion for the Ribera del Duero is still intact and he has now created ‘Antidoto’, a toned down version of Dominio de Atauta, sourced from 7 hectares of ancient vineyards, which are at least 60 years old (many date back to pre-phylloxera!). Bertrand’s extensive CV includes stints with Alvaro Palacios, as well as at Château Léoville Las-Cases and Château Mouton Rothschild. His work centres around a little village called San Esteban de Gormaz, 70km west of the town of Soria. High, dry, cold and very remote, the vineyards are organically grown and biodynamically farmed at around 1,000m above sea level with 50% owned and 50% rented, consisting of almost 200 separate small plots. Different soils are vinified separately and then blended before barrel ageing. 50% of the wine hails from the village of Soto de San Esteban (west of San Esteban de Gormaz) – mainly sand and river stone soils, with no limestone. North of San Esteban de Gormaz are the hamlets of Matanza and Villalvaro, where the soils are red clay over limestone and these make up 20% of the blend. The balance is from sand-limestone soils in San Esteban itself, Quintanilla de tres Barios to the north and Mino de San Esteban to the south. The fruit is carefully sorted and destemmed, then given a short, cool 8-10 days fermentation in concrete vats, with the aim of achieving a gentle, delicate extraction. The wine then spends 10 months in 2-5 year old French barriques (ex Château Haut-Brion). The soils here are deep and consist predominantly of thick red clay and sedimentary sand, pebbles and sedimentary rock. The founder of the project was Gregorio Martínez, who started to purchase land around Sorzano, his wife’s hometown, in the late 1970’s\/early 1980’s.\u003cbr\u003eCurrently managed by his descendants, the project changed dramatically following the appointment of head winemaker Ricardo Cantera back in 2009. Recently, they have embarked on making a new range, Finca Gregorio Martínez; fresh reds and whites as Ricardo likes to work with very low quantities of sulphites. At 700m of altitude and north-oriented, the vineyard suffers under extreme climate conditions. Harvest never starts before the second week of October and in some years it may not finish until November. All grapes are hand-harvested into small crates of 15kg. With up to five different clones grown on the estate, Tempranillo is the dominant grape while Mazuelo (Carignan) and Viura cover around two hectares each. A recently introduced range - Finca Gregorio Martínez includes a clean, vibrant white Viura; a vibrant, pale-coloured rosé made from Tempranillo and a Mazuelo aged in oak for 8 months plus two single-varietal reds crafted from Tempranillo and Mazuelo respectively. Rather unusually the malolactic fermentation takes place in the same tank with skins, resulting in wines that exude a natural freshness, expressing notes of wild herb. The grapes were pristine and perfect, and they got a little more of them, so they aged the wine in a 1,200-liter oak foudre. The wine is super pale, floral with notes of decayed rose petals, musk and herbs (tomato vine), with lots of cleanliness despite the initial faint reduction. It has energy and fine tannins that are gentler than those from Navatalgordo. This is a wine of peace, harmony and complexity, a wine that feels very complete. 1,406 bottles and 50 magnums produced. We are near the village of Cebreros at an altitude of 950m on a south\/south-easterly vineyard plot, planted in 1943.  While sandy granite soils with varying amounts of quartz and clay are the norm in the Sierra de Gredos, there are some vineyards on schist and slate soils as well. El Reventón is planted on just such a rare outcropping of slate. This produces wildly aromatic, darker, richer wines with a firmer structure. Las Iruelas is an apparently more muscular Garnacha due to this unique terroir with aromatics that are more Rhone-like in personality.
