Billaud-Simon is a household name in Chablis. Producing great Chablis for many decades, the estate had reached the very top under the canny management of Bernard Billaud, until 2014 when the highly respected House of Faiveley purchased the estate. Regarding the purchase, Erwan Faiveley stated: "In the great tradition of Bernard Billaud, we will continue to focus on the outstanding characteristics coming from the Kimmeridgian terroirs of Chablis, to create focused, precisely-vinified, mineral-driven wine." Domaine Billaud-Simon was first established in 1815 and comprises almost 20 hectares of vines. The Domaine owns vines in four Grands Crus: Les Clos, Vaudésir, Les Preuses and Les Blanchots, as well as four Premiers Crus: Montée de Tonnerre, Fourchaume, Mont de Milieu and Les Vaillons. Meticulous vineyard work, practicing a medley of biodynamic, organic and lutte raisonnée methods, with state of the art winemaking facilities, ensure that these wines are a reference point in Chablis. Billaud-Simon produces wines from high quality old vines, which capture the essence of this unique terroir. The style has always been very precise and minerally driven, yet with great subtlety. The wines can be Billaud-Simon Chablis 1er Cru Vaillons has harmonious aromas of crushed oyster shells, citrus and a touch of smoke. Wonderfully inviting, Chablis 1er Cru Vaillons Billaud Simon has a refreshing acidity and pure fruit character, complemented by a mellow texture and a lingering finish.
Clean and fresh, light citrus notes with an underlying saline minerality. A soft texture and a delicately fruity finish with persists on the palate.
