Claude Fonquerle used to play rugby and his wines from Domaine l'Oustal Blanc represent his life: they are larger than life and if they could sing, they would do so with his marvellous, warm accent. Claude loves the Languedoc-Roussillon and works meticulously to produce unique, generous wines, which are living proof of the Languedoc’s immense potential. During the harvest, bunches are first selected in the vineyard and again berry by berry when they reach the cellar. The best cuvées are fermented in small open-top barrels, as in Priorat, resulting in extremely intense and rich, almost black wines, which need a few years to develop their potential.
“K”, for example, is made from 100% carignan and is a Vin de Table (so it can’t say carignan on the label at the moment – but rules are changing). It’s made from 35 year old vines, so there’s nothing simple about this wine. The wines Claude make have both elegance and finesse. And tasting them one cannot help feeling a certain resemblance to (or inspiration from) other wine regions
