This climat is on a well exposed site facing East, situated across from the village of Pernand. The slope is quite steep but erosion is limited by limestone banks. The soil takes on a red colour due to the ferruginous clay present in the ground.\u003c\/p\u003e\n\u003cp\u003eGrapes are hand-harvested at optimal ripeness, followed by careful sorting, in small crates followed by careful sorting in the winery. A conscientious handling extracts optimal colour and tannins whilst maintaining finesse. The fermentation lasts 15 days with gentle pigeages (punching down of cap), to encourage finesse. Aged in oak barrels (15% new) with a proportion of carefully selected used barrels, to subdue structure and refine complexity without overpowering.
