In 2017, Vagelis’ daughter, Chloi, returned to Greece after completing winemaking studies in France and Portugal. She brought with her a modern, low-intervention philosophy along with less familiar winemaking techniques such as pétillant naturel (‘pét nat’) and carbonic maceration.\u003c\/p\u003e\n\u003cp\u003eThe grapes are sourced from organically cultivated vineyards laid out in a linear formation in Bidabla, located in the renowned wine-growing region of Goumenissa. The vines thrive in light-textured sandy-clay soils, which provide excellent drainage and contribute to the wine’s vibrant freshness and balance.\u003c\/p\u003e\n\u003cp\u003eThe winemaking begins with a gentle pre-fermentation cold maceration lasting two days, which helps to extract delicate aromas and color. Following this, the temperature is allowed to rise gradually to trigger a controlled alcoholic fermentation.
