In 2017, Vagelis’ daughter, Chloi, returned to Greece after completing winemaking studies in France and Portugal. She brought with her a modern, low-intervention philosophy along with less familiar winemaking techniques such as pétillant naturel (‘pét nat’) and carbonic maceration.\u003c\/p\u003e\n\u003cp\u003eThis unique blend combines 70% Negoska and 30% Xinomavro grapes, sourced from vineyards arranged in a linear layout across Pentalofos and Griva, situated at an elevation of 700 metres in the renowned wine-growing region of Goumenissa. The vines thrive in medium-textured sandy clay soil, which contributes to the wine’s balanced structure and complexity. The high-altitude vineyards ensure optimal ripening conditions, resulting in a wine that beautifully marries the rich fruitiness of Negoska with the bold, savoury character of Xinomavro.\u003c\/p\u003e\n\u003cp\u003eMaceration takes place over few hours in the press before spontaneous co-fermentation is allowed to take place between Negoska and Xinomavro grapes in INOX tanks. No additions, fining or filtering occur. The wine is bottled while fermenting in order to finish the alcoholic fermentation in the bottle, making it naturally sparkling. It remains in contact with the lees for 6 months in the bottle and then it is manually disgorged. It is fruity with a pleasant aroma of cherries and strawberries.
