In 2006 Gonzalo Celayeta started work as a winemaker at Bodegas San Martín, within the subarea of Baja Montaña in the DO Navarra. He trained at EVENA (Navarra’s Viticulture and Oenology Centre), and launched his own project in 2004. Focusing on Garnacha, his production is very low producing between 10,000 to 13,000 bottles, which include his white, rosé and red wines. Unusually, the ‘El Caserio’ is barrel fermented in Spanish chestnut wood.
Navarra Tinto ‘Kimera. Vineyards located in the town of San Martín de Unx, sub-area of Baja mountain of the Navarra Designation of Origin. The ‘Land of Garnachas’ with a long viticultural tradition. Terroir: 600m of altitude, soils of average fertility, terraces and small slopes with clay-calcareous soils in general. Matured on lees for 12 months in clay jars (tinajas) of 4.000L.
Intense layer wine, cherry and vivacious tonality. Intense, fruity aroma, with floral memories (violets) and wild notes (scrubland). In the background we find an earthy and delicate point that brings the jar. Mouth powerful, enveloping, with sweet notes but very fresh. Fruit predominates and mud memories return, very fine, well integrated.
