Alice and Olivier are well known for their pure, natural wines that they craft from small plots in Chablis, Chitry and the little known Saint Bris appellation.
They have been tending their organic vines near their village of Courgis for over twenty years now. Courgis lies north west of Dijon so it is quite a cold area leading to low yields from the vines. Both Alice and Olivier share the winemaking as they work together to craft these stunning wines.
De Moor Bourgogne Aligoté 2022/23 is a non-vintage (NV) natural white wine from Burgundy, France, made by Alice and Olivier de Moor from Aligoté grapes, blending 75% of the 2023 vintage and 25% of the 2022 vintage.
The Bourgogne Aligoté NV is a vibrant, refreshing white made from this often-underrated Burgundian grape. The vines come from older, well exposed parcels around Chitry and neighbouring villages, where limestone-rich soils impart energetic minerality. The 2023 vintage was marked by a cool, slow ripening season with well-balanced acidity and moderate yields, resulting in a precise and lively Aligoté. Wild yeasts drive the fermentation, with the wine aged briefly in neutral vessels to preserve freshness. The nose reveals bright citrus, green apple, and a hint of white flowers. On the palate, it is crisp and saline with fine texture and a persistent mineral finish, a charming, terroir driven example of this classic varietal.
