The vineyard, exposed to the west, is located in Contrada Buonivini and is cultivated with spurred cordon on white calcareous soils at an altitude of approximately 50 meters above the sea level. The very low yield, the light, the winds and the heat of the place give to the white Moscato grapes a unique typicality, which leads them to naturally have great fragrance and finesse.
The grapes harvested at full ripeness are left to dry outdoors, in our “baglio”, on special trellies exposed to the light and heat of August.
The winemaking takes place with the skins, the fermentation occurs in steel until it comes to a natural stop caused by the concentration of sugars and alcohol. Uvalsole is a “Fortified Moscato”, which we obtain by fortifying the “Passito Moscato” with the “acquavite” produced from the same wine from which it originates: part of our Moscato wine is in fact delivered to the distillery to produce acquavite of white Moscato grapes, obtained with bain-marie distillation in a discontinuous alembic still. Once assembled, the wine ages in the bottle until the spring following the harvest. Sweet, full and intense, with typical nuances of sun-dried grapes!
