The 6-hectare Domaine Hauvette is run along strictly biodynamic lines by Dominique Hauvette in the village of St-Remy de Provence in the appellation of Les Baux de Provence. Dominique's wines have become much sought-after in recent years largely due to the enthusiasm of Robert Parker for the wines. Like the nearby Domaine de Trevallon the wines made here are a blend of Cabernet Sauvignon, Syrah and Grenache and are classically understated yet full of the earthy aromas and flavours of the garrigue.
Dolia will take your nose and palate for a ride. Smoke, wildflower honey, gunflint, and quince feature in this fleshy, sturdy masterpiece. The finish, reminiscent of pure stone, is as decisively firm.
