Mont Rocher, Haute Vallée of Limoux
Produced from older vines, lessening yield but increasing complexity, acidity and quality.
Cinsault grapes are harvested from selected sites in the heart of the Languedoc, between the Black Mountains and the Canal du Midi. It is here some of the most outstanding Cinsault is grown and crafted to display purity of fruit and a distinctive 'goût de terroir'.
The grapes are checked throughout August, in order to choose the right day to harvest. Post- harvest, the grapes undergo skin-contact maceration to extract soft pink colour from the skin. The juice, is collected after a delicate pressing and fermented at a low temperature in stainless steel.
Delicately pink from gently pressing the grapes, they have created a soft, juicy and refreshingly dry Rosé crammed with white flowers and raspberry aromas. Notes of white peach, cherry and grenadine.
