Domaine Bornard, Pupillin 

Located in Pupillin, Jura, is a renowned producer of natural wines, founded by Philippe Bornard and now run by his son, Tony Bornard, who took over in 2017. The estate spans 11.5 hectares, farming Pinot Noir, Poulsard, Trousseau, Chardonnay, and Savagnin biodynamically to produce pure, expressive, and frequently sought-after, sulphur-free wines often featuring a distinctive fox label

50 to 80 years old in mass selection, organically grown and planted on pink iridescent marls, in the place called "Les Chambines". Bottled at the Domaine without fining, filtration or addition of sulphites.

A powerful Chardonnay from old vines. Manual harvesting is followed by spontaneous fermentation with wild yeasts. Ageing happens in large oak barrels, and in the 'ouille' (non-oxidative) style. Plenty of yellow stone fruit, citrus and minerals at play, with some subtle nutty elements. The palate is juicy, mineral and rich, with medium body and good acidity to keep things flowing.
