Located in Pupillin, Jura, is a renowned producer of natural wines, founded by Philippe Bornard and now run by his son, Tony Bornard, who took over in 2017. The estate spans 11.5 hectares, farming Pinot Noir, Poulsard, Trousseau, Chardonnay, and Savagnin biodynamically to produce pure, expressive, and frequently sought-after, sulphur-free wines often featuring a distinctive fox label.
100% Ploussard from vines of 45 to 80 years old in mass selection, organically grown and planted on pink iridescent marls, in the place called "Les Chambines". Manual harvesting, total destemming, fermentation and maceration in 2400 liter barrels. Punching down and pumping over once a day for 3 weeks, one month of maceration, pressing, aging in the same tuns. Bottled at the Domaine without fining, filtration or addition of sulphites.
A nose of beautiful complexity, with notes of quince, citron, honey and almond in the shell. The palate is rich and fleshy, with wonderful volume, and a long finish with a hint of brioche.crunchy.
