Cavallotto Fratelli, Castiglione Falletto, in the heart of the Barolo Zone
Today the children of Olivio – Laura, Giuseppe and Alfio, the 4th generation working the family farm – continue to exclusively vinify the grapes produced in their estate vineyards into DOC and DOCG wines: Barolo, Dolcetto d’Alba, Barbera d’Alba, Langhe Nebbiolo, Langhe Freisa, Langhe “Grign” made from Grignolino grapes, Langhe Chardonnay and “Pinner” made from Pinot Nero grapes.
Since 1928, the Cavallotto family has owned the estate Tenuta Bricco Boschis. In 1946, they were the first cultivators in Castiglione Falletto to vinify all of their estate’s fruit. In 1948 they released the first bottling of their own BAROLO wine, with the label and registered trademark of Cavallotto.
Dolcetto d’Alba parcel “Vigna Scot” (Dolcetto 100%) (on the hillside between Bricco Boschis and Monprivato/Codana).
Fermented with indigenous yeasts, macerated with submerged cap for 3-4 days. Aged in large Slavonian oak botti of 50 hl for 6 months, then in cement tanks for 6 months.
Medium-structured yet soft with typical aromas such as cherries and other fruits with a complex, floor bouquet. Although it is a wine made to be drunk relatively young, it still has aging potential for up to 5 years.
