Julien Mareschal established Domaine de la Borde, in the appellation of Arbois-Pupillin in the region of Jura, in 2003. The domaine grows a variety of classic Jurassic grape varietals, and the majority of the vines are more than 30 years old, most having been planted back in the 1980’s. This particular cuvée « Caillot » is 100% chardonnay grown on a rather steep, south-facing hill at 550m altitude, and harvested manually, as all the grapes are. Destemmed at 80% and then racked and fermented in barrels, aging on the lees for approximately 24 months before being bottled.
The Pinot Noir "Sous la Roche" is an elegant and energetic red wine with good structure and salty freshness, born in Pupillin in the Jura region and aged for 18 months in oak barrels. Elegant and delicate aromas of red fruits, sweet spices and balsamic herbs animate a dynamic and linear drink, supported by noble tannins.
