Having first established the domaine some 40 years ago in 1975, Jean-Michel Masson-Blondelet and his wife Michelle have been making trademark Pouilly Fumé for more than 30 years and are now supported by their daughter and son, Mélanie and PierreFrançois. Constant improvements in the vineyards and search for perfection in the cellar have steadily lifted the domaine to the very top of the appellation. The 21 hectares of vineyards are planted on limestone with a mix of clay and flint, which contributes finesse and complexity to the wines. They are very attractive in their youth, but can age remarkably well for 2-4 years in bottle. Jean-Michel refrains from using any chemical fertilisers, any weed killers or insecticides. The ploughing of the soil is crucial; by keeping it regularly tilled, keeps the soil well aerated and alive with microfauna, helping to promote the clear expression of each of their terroirs. The fruit for the ‘Villa Paulus’ cuvée originates from parcels of vines totalling 4.5 hectares (25-40 years of age) grown on Kimmeridgian marl soils (marnes), full of fossilised marine (oyster shell) deposits. In the cellar, working with gravity, cold settling and the retention of fermentation CO2 enables the winemaking process to be carried out with less recourse to pumps, whilst also enabling a lower SO2 regime in general. On receipt of the harvest, the fruit is destemmed immediately, before being gently pressed in order to avoid skin contact or oxidation. Fermentation in stainless steel tanks after cold settling.
