An innovative French winemaker, Benoit Courault began his career making conventional wines before embracing natural winemaking methods. In 2006, Benoit established his winery in a restored farmhouse in Faye d'Anjou, in the heart of the Loire, where he dedicated himself to producing natural, organic and biodynamic wines with a respectful and sustainable approach.
The grapes for this wine undergo spontaneous fermentation with native yeasts in the winery. Afterwards, 50% of the wine is aged in previously used French oak barrels and the rest in fibre tanks, and then bottled by hand without clarification or filtration, adding only a minimal amount of sulphur.
Fresh cherries and strawberries come bursting out the gate, juicy, but there's depth there too, and a lil sprinkling of freshly ground pepper.
Grapes: 70% Grolleau and 30% Cabernet Franc
